The koji rice is made from the sake rice 'Gohyakumangoku' and the kake rice is made entirely from Niigata rice, polished to the ginjo standard of 57% and brewed slowly at a low temperature. The sake has a smooth, smooth, one-rank-above quality flavour without a hint of spiciness.
