The brewery was established in 1887 in Aburaya, present-day Gosho City, Nara Prefecture, in the Edo period (1603-1868); it has a 130-year history and is located at the foot of Kongo and Katsuragi National Park in the western part of the Nara Basin.
The brewery makes small-batch sake by hand, and its representative brand is Hyakurakumon. The name means 'a delicious sake that is greatly enjoyed and is the start of a delightful sake banquet'.
Urasae is brewed using out-of-spec rice (rice outside the standard) produced in the rice-growing process, in order to coexist with the producers. Because of the use of rice from outside the standard, the sake cannot be designated as a Tokutei Meishu, but the rice polishing ratio is 60%, the same as for Junmai Ginjo.
To distinguish it from Tokutei Meijo sake, it has a mirror character on the front. It is commonly known as '裏・百楽門' or '裏・冴'. It is brewed at a high sake strength, but it is not only spicy, but also has an acidity that tightens the taste and gives it the fullness inherent in Omachi.
The rice polishing ratio is 60%, so we hope you will enjoy Urasae.
Enjoy it cold or lukewarm.
