This product is the 'rice bag series Shinnosuke ver', cultivated under contract with local farmers.
Shinnosuke is the next generation of rice, created by Niigata Prefecture over a period of more than 10 years to develop a rice that surpasses Koshihikari.
The sake is pressed slowly and with as little pressure as possible so as not to put too much stress on the sake during the top tanking process, resulting in an easy-to-drink sake with no unpleasant taste.
Basically, this product is made in a different way each year depending on the quality of the rice and other factors. The specifications are "undisclosed".
The brewery does not use sake rice, but instead uses all edible rice 'Shinnosuke', which we hope will give the brewery its own unique flavour.
