The brewery uses locally grown sake rice and brewing water from the rich natural environment, including the sacred mountain of Mt Hakusan in Gosen City. Echigo Toji Junsensen is made with a rice polishing ratio of 58% for both koji rice (Gohyakumangoku) and kake rice (Koshiibuki), which is rather high for an everyday sake, and is favoured by local people for its dry taste that is both light and refined with a mellow quality.
