Founded in 1850, this is the only sake brewery in Kumagaya. Naohito Gonda, the seventh generation of the brewery, has been the toji (master brewer) since 2021, working with his younger brother Takuya and senior employees from early morning to late at night. The brewery takes on a variety of challenges while utilising local ingredients in a traditional handmade process, and presses all the mash using the tsuzakake method, which is becoming less common throughout the country. The aim is to preserve the tradition of a sake brewery that was once home to six companies, and to make it a source of pride in the region. After more than 50 years of absence from the gold medal in the National New Sake Competition, the brewery was awarded the gold medal in the 2023 brewing year. Naozane Dry is a regular sake that has been a favourite at local bars for many years. The sake has been made full-bodied by undergoing a process called shodan-kake (four-stage hanging) before the top-filling of the vat. It is recommended to be heated. During the hot summer months, it is also delicious mixed with cider. Gold medal-winning sake in the value-for-money hot sake category of the Heated Sake Contest 2023.
