The brewery has inherited the Izumo style of sake brewing from the Izumo Touji clan and makes use of local water, using spring water from the Jizo Daki spring in Uno, in the same town, and spring water managed by the town's Kataji area, which has been analysed to show that its water quality is as good as or better than the best water in the prefecture for brewing, to create sake with an emphasis on quality.
Under the motto 'Wajo Ryoshu' (brewing good sake by valuing the harmony of brewers), the brewery aims to produce sake that lives up to the traditional brewing tradition that has been handed down since the Meiji Era.
In August 2021, the Hoshitori Label Series, a new concept associated with Tottori Prefecture, was launched. We are striving to become the number one star of Tottori and to take on the challenge of brewing sake from Tottori that can be used around the world.
Among these, Hoshitori RED STAR is the entry point to the series, combining high quality with an affordable price tag. It is a bottle that shows its strength both chilled and warmed.
