75% of sake rice production is sourced from in-house and contract cultivation. All rice, including the other 25%, is grown in Hiroshima Prefecture. Own rice milling facilities. The flavour of each rice is expressed in the sake. Brewing is done in units of 500-1,000 kg and is meticulously hand-made in small quantities according to the target quality of the sake.
The brewery specialises in producing matured sake with a soft spread of flavour that does not deteriorate even after long-term storage. It is stored in temperature-controlled warehouses and in a 70 m deep tunnel cellar with an average room temperature of 13°C.
