This small brewery has a history of about 100 years in the town of Funakoshi in the eastern part of Hiroshima City.
Sake is brewed using clean spring water from Iwatakiyama, a granitic rocky mountain rising at the back of the town, from which rainfall is filtered and flows out as groundwater.
Honshuichi Unfiltered Honjozo is made from Hachitan-Nishiki, Hiroshima's best rice for sake brewing, refined to 70% and brewed with Hiroshima Ginjo yeast. By omitting the activated charcoal filtration process, the sake is left with a stronger undiluted flavour.
This light honjozo has a refreshing flavour and slightly dry taste, and its fruity, floral mouthfeel makes it easy to understand and enjoy for those who are not used to drinking sake.
It has been awarded Gold at the International Wine Challenge, a traditional wine competition in the UK, and is also highly regarded overseas.
