Founded in 1673, this is the oldest sake brewery in Tochigi Prefecture, celebrating its 350th anniversary this year. Representative brand Kaika. Under the belief that "sake brewing starts with rice cultivation", the brewery uses sake rice grown by the brewer himself in his own rice fields and rice grown by local farmers as the main ingredients. This junmai sake is a "Kaike" sake.
This Junmai-shu is the very face of Kaika, designed with a balance of rice flavour, acidity and sharpness, which is the 'basis of Kaika'. It is a light, umami-guchi sake with a characteristic rice flavour and sharpness, made using rice grown by nearby farmers, 'Tochigi no Hoshi'. It can be enjoyed at a wide range of temperatures: cold, room temperature and warmed. Winner of the highest gold medal in the National Heated Sake Contest.
