Itsumi Shuzo is one of five breweries on Sado Island in Niigata Prefecture, famous for its gold mines.

It is the smallest brewery on Sado. Only as much sake is brewed at any one time as can be seen by the human eye. After the rice is steamed and koji is added to the steamed rice, the process is carried out by hand, using all five senses. Even if the times change, the brewer's persistence in this area cannot be allowed to change. We continue to carefully craft our sake so that our customers feel that they have found a good sake. We are a sake brewery that is willing to try new things.

For example, it is the only brewery on Sado Island and one of only a few in the prefecture that makes Yamahai-brewed sake. It is an old and time-consuming process, but I think it is a sake that can be positioned as a distinctive local sake of Sado.

The Maryo Ichimi Shin is a slightly dry honjozo with a more umami and aromatic flavour, while maintaining its standard character. It is a light, dry sake with a gorgeous, umami taste, so you can enjoy the changes in flavour and aroma from cold to hot sake.
