The company is challenging itself to create a new sake flavour by utilising the blessed natural environment of Dokutsu, which was dug up as a tank factory during the war. The unique flavour is created in a natural maturing environment that differs from forced single temperatures (refrigerators, etc.) by maintaining a temperature range of 15°C in summer, 5°C in winter and an average annual temperature of 10°C, which shades out light and prevents overripening. The soft, full umami flavour is balanced with a smooth, aromatic taste that complements food and can be enjoyed comfortably. It is a sake that can be matched with a relatively wide range of dishes and goes well with full-bodied dishes.
