Kiso-cho Fukushima, where the Nanasho Brewery is located, is in the south-west of Shinshu, in a valley surrounded by high mountains.
Winters are bitterly cold and there is lingering snow on Mt Kiso Ontake, a sacred mountain, even in mid-summer. The land is so cool that it is sung in Kiso-bushi, "It's cold even in summer".
The brewing water of Nanasho is the underground water from the Kisokoma mountain range. The water is soft and mellow, with a slight sweetness.
It has a deep, clear flavour, like fresh water springing up in a cool, still forest.
Nanasho's dry sake is characterised by its refreshing, easy-drinking quality and is a local favourite of the Nanasho brewery.
It can be enjoyed in a wide range of temperatures, from chilled to warmed.
