Hayakawadani, Itoigawa City, Niigata Prefecture, a region rich in nature with 2000 m mountains in the background, where sake is brewed entirely with local Hayakawadani sake rice, water and air, carefully nurtured by the brewers under the theme of 'modern expression of tradition: a neo-classic'.
The small local pond 'Tsukifumi no Ike' was originally called 'Shozu Ike', where the villagers used to gather in the evenings after rice planting was finished and drink together.
Gekifumi-no-ike Junmai-shu is a beautiful junmai-shu with a round, smooth taste that goes down the throat, bottle-fired and rapidly cooled to preserve the aroma.
It is an entry-level junmai sake with the flavour, fragrance and richness of Takananishiki, and is a sharp, high-level junmai sake with a very good overall balance despite being a junmai-brewed entry model.
