Nakagawa Sake Brewery, located at the foot of the Nishiyama mountain range, is a place where white geese fly over, hence the name Echino Shiragane. Echino Shiragane Kuromatsu is brewed slowly at low temperatures using Gohyakumangoku (rice suitable for sake brewing) for the malted rice and rice from Niigata Prefecture for the premium rice, polished to a ginjo standard of 60%.
