Niigata Meikozo carefully brews sake in Ojiya City, an environment surrounded by deep snow and rich nature, using clean local water and Echigo rice with advanced techniques inherited from the Echigo Toji clan. The brewery is characterised by Niigata's traditional light, dry taste.
The name 'N-888 Junmai-shu' comes from the fact that the sake was brewed through 1,200 trial brewings, of which the 888th was the closest to the ideal sake, in order to produce a sake that suited the modern diet. Made from 100% Niigata rice, this new Junmai sake has a heavy aroma reminiscent of bananas and pears, and a light taste like strawberries and lychee. The refreshing acidity is sure to become a habit.
