Yahiko Sake Brewery was established in a place called 'Izumi', where the subsoil water of Mt Yahiko, the sacred body of Yahiko Shrine, springs. The Yahiko Shuzo brewery has inherited the 'Izumi-style brewing method' established by its predecessors, and as a sake brewery serving the shrine, the brewery does not brew strange sake, and pursues 'genuine national sake' by brewing small quantities of sake without using a large number of stones.
The 'Normal Sake - Polar' is an unfiltered, bottle-fired sake that is 'normal sake, but not normal sake'.
The moromi is fermented at low temperature for a long time and carefully brewed at a low temperature for a long time, just like when making daiginjo. It is the 'ultimate' sake for food, with low acidity and does not interfere with food.
