A long-established sake brewery: Shusse-jo (founded in 1871) × a young master brewer (Kengo Wakuda, aged 37). Hamamatsu Sake Brewery is located about 2 kilometres from JR Hamamatsu Station—a 30-minute walk— Its brewery, comprising the Showa and Heisei buildings, is situated along the old Tokaido Road in the city centre. The brand name ‘Shusse-jo’ (Castle of Success) was chosen to evoke the legend that Hamamatsu Castle, a local landmark, was once known as ‘Shusse-jo’ (Castle of Success), and the brewery is well-loved as a sake producer with an auspicious name. The master brewer who runs the brewery was born and raised in Hamamatsu. He learnt the fundamentals of sake brewing at the Department of Brewing at Tokyo University of Agriculture and at a sake brewery in Saitama Prefecture, before returning home to take up his post as master brewer. Although he has only nine years’ experience as a master brewer, he boasts a track record of three awards and two gold medals at the National New Sake Appraisal.
National Warm Sake Contest 2024 – [Premium Lukewarm Sake Category] Grand Gold Award Winner – This brand is brewed using Shizuoka Prefecture’s sake-brewing rice ‘Reiwa Homare Fuji’, utilising Shizuoka’s ‘rice’, ‘yeast’ and ‘water’ as its raw materials. It expresses the umami and sweetness of the rice, and its vibrant flavour is encapsulated in the master brewer’s description: ‘juicy’.
