Chiyo no Sono Sake Brewery was founded in 1896 (Meiji 29) in Yamaga City, a town that flourished as a post town on the Buzen Kaidō. With our roots in the rice wholesale trade, we have maintained a strong commitment to ‘rice’ ever since our establishment. We have consistently undertaken initiatives that are ahead of their time, such as the development of ‘Kyushu Shinriki’, based on the sake rice variety ‘Shinriki’, and our pioneering efforts in junmai sake production, which were ahead of the rest of the country.
In our sake brewing, we pursue our ideal flavour by meticulously carrying out each step of the process, from the rice polishing ratio and brewing formula to the temperature control of our groundwater. Furthermore, whilst preserving tradition, we have actively sought to create new value, such as the commercialisation of Daiginjo sake with cork stoppers.
Moving forward, whilst cherishing our commitment to ‘crafting sake that meets our customers’ expectations’, we will continue to develop products that complement cuisine and respond to contemporary needs, whilst maintaining a brewing philosophy that allows you to experience the climate and history of Yamaga.
