Founded in 1880, Shimoetsu Shuzo is a sake brewery that has inherited the traditions of the famous Aga-machi Tsugawa area in Niigata Prefecture, where the current head of the brewery, who is a second-generation sake connoisseur, has devoted himself to improving quality and studying sake brewing techniques, and working with the brewery staff to produce distinctive sake.
Among these is Junmai Ginjo Midori from the Kambara series, a junmai ginjo sake made entirely from Niigata-grown Gohyakumangoku sake rice and brewed with in-house yeast. It is impressive for its gorgeous aroma and mellow, full-bodied flavour.
