Kiso-cho Fukushima, where the Nanasho Brewery is located, is in the south-west of Shinshu, in a valley surrounded by high mountains.
The winters are bitterly cold and there is lingering snow on Mt Kiso Ontake, a sacred mountain, even in mid-summer. The land is so cool that it is sung in Kiso-bushi, "It is cold even in summer".
The brewing water of Nanasho is the underground water from the Kisokoma mountain range.
The water is soft and mellow, with a slight sweetness.
It has a deep, clear flavour, like fresh water springing up in a cool, still forest.
Junmai Ginjo-shu is made from Miyamanishiki grapes from Nagano Prefecture and is a delicious sake with a good balance of subtle aroma, richness and moderate acidity, and a refreshing aftertaste that sinks deeply into the mind of the drinker.
Recommended to drink chilled or at room temperature.
