This ginjo-shu is made using Koshi-tanrei for the koji rice and Niigata rice for the kake rice, polished to 50% of the daiginjo standard and brewed slowly at a low temperature. It is a slightly dry sake with a gentle ginjo aroma and a soft, well-balanced flavour.
