Founded in 1688 (Genroku era), this long-established brewery, which celebrates its 337th anniversary this year, believes in "dedicated sake brewing" using Omachi rice, a fantastic sake rice produced locally in Akaban, and Omachi cold spring, one of Japan's 100 best waters, as the brewing water. It is highly regarded and has won numerous awards, including the first prize trophy in the sake category at the 2010 IWSC (UK) International Sake Competition, as well as the Monde Selection for 26 consecutive years (including 23 top gold medals). The Omachi rice used by the company is a prototype variety, an ancestor of Yamada-Nishiki, which was discovered approximately 160 years ago, and is a rice suitable for sake brewing, characterised by its original sake flavour. Junmai Ginjo Bizen Gen is made from 60% Omachi rice from the best Omachi rice fields in Akaban, and brewed with Omachi Cold Spring, one of the 100 best waters in Japan, for the brewing water.
