The company was founded in 1839. The company was originally a shipping agent, and the founder, Sasaya Shigezaemon, opened a warehouse in Agano City, which is famous for Lake Hyouko (gourd lake). The area was a shogunate territory during the Edo period, when the 'Echigofu' was established. The town has a long history and tradition as the 'birthplace of Niigata Prefecture', where the prefectural government was established as 'Mizuhara Prefecture', the predecessor of today's Niigata Prefecture, when the prefecture was abolished after the Meiji Restoration. The Junmai Daiginjo Echigofu, which bears its name, is made from 100% Niigata-grown 'Gohyakumangoku' and carefully brewed over time by the brewers of Echigofu. This sake is sold exclusively in Niigata Prefecture, where you can enjoy its mellow aroma, soft spiciness and rich flavour, and its subtle, mellow richness.
