Long-established sake brewery: Dezejo (founded in 1871) x Young toji (Kengo Wakuda/age 37). The Hamamatsu Sake Brewery has two breweries, the Showa Brewery and the Heisei Brewery, located along the old Tokaido Highway in the city centre, a 30-minute walk from JR Hamamatsu Station, about 2 km from the station. The brewery's chief brewer is Hamamatsu Toji, who is the master brewer behind the brewery. The toji behind the brewery was born and raised in Hamamatsu, studied the basics of sake brewing at the brewing department of Tokyo University of Agriculture and at a sake brewery in Saitama Prefecture before returning to his hometown to take up the position of toji. He has been toji for a total of nine years and has won three awards and two gold medals at the National New Sake Competition.
