Tenaka Sake Brewery was founded in 1914 and is located at the southern end of the Nasu Highlands in northern Tochigi prefecture, in a rural area between two rivers, the Nakagawa and Broomstick Rivers. The brewery brews sake in an environment rich in nature, with clean air and soil, and an abundance of groundwater from the Nasu mountain range. The company name 'Tenaka' was given by the founder, who dreamt of a giant hawk soaring in the sky. The company has been brewing only dry sake since its foundation, believing that "if it is not dry, it is not sake". Always ahead of its time and unafraid of change, the company has always been "challenging sake brewing", for example by launching "rice-only sake" more than half a century ago, when the term "junmai-shu" (pure rice sake) did not exist.
Yumesasara is a new variety of rice suitable for sake brewing developed by Tochigi Prefecture over a period of more than 10 years. Junmai Ginjo Tenaka Yumesasara pours into the glass with a bouncy aroma of pineapple and cherry pie, with a fresh apple jam-like flavour. It has a soft mouthfeel and complements meals.
