Founded 350 years ago, it is the oldest sake brewery in Tochigi Prefecture, producing the leading brand Kaika. The brewery grows its own rice in its own paddy fields, based on the belief that 'sake brewing starts with rice cultivation'. Handmade sake is brewed under the supervision of Shimono Toji Morihiro Saito, using high-quality water from Sano City, which has been selected as one of Japan's 100 best waters, rice grown by contract farmers in the local town of Tajima, and rice suitable for sake brewing grown in the company's own rice paddies. The sake has a fruity, gorgeous aroma and a soft, clear flavour, and is loved by locals who want to drink it every day.
Junmai Ginjo Yumesasara is a mellow dry sake with a refreshing fruity aroma, a light and refreshing flavour and a good balance of acidity, made from 100% Yumesasara, a sake rice indigenous to Tochigi Prefecture.
