The brewery was founded in 1865. The brewery has been cultivating the land and growing rice for over 200 years since the first generation and has become a sake brewery. Today, the brewery produces mainly junmai sake, using sake rice grown in-house and rice grown by contract farmers. The aim is to bring out the full flavour of the rice nurtured by Akita's nature and to create a food-friendly sake that goes well with food. Junmai Daiginjo Hiten no Yume is a sake characterised by the vivid flavour of Akita Sake Komachi, and is best served chilled at around 10°C in a thin glass.
