This small brewery has a history of about 100 years in the town of Funakoshi in the eastern part of Hiroshima City.
Sake is brewed using clean spring water from Iwatakiyama, a granitic rocky mountain rising at the back of the town, from which rainfall is filtered and flows out as groundwater.
Honshu Ichi Unfiltered Junmai Ginjo is made from Hiroshima's best rice for sake brewing, Senbon-Nishiki, refined to 60% and brewed with Hiroshima Ginjo yeast. By omitting the activated charcoal filtration process, the sake retains more of its original flavour.
It has a fruity, floral flavour, yet is smooth and calm, making it easy to enjoy for those who are not accustomed to drinking sake.
It has been highly acclaimed overseas, winning Gold at the International Wine Challenge, a traditional British wine competition, and Platinum at the KURA Master, an up-and-coming sake competition in Paris, France.
