Chiyo no Hikari Sake Brewery is a historic brewery that has been producing sake in Myoko City, Niigata Prefecture, since 1860.
Although it is a small brewery, it is characterised by its meticulous production, which is similar to that of a ginjo sake.
Carefully selected rice is polished to 45% and brewed in the same way as a daiginjo. A food-grade ginjo sake with a subdued aroma. Enhances the taste of food.
