The company was founded in 1830 and started brewing sake in the former Wajima village, which is blessed with good water and high-quality rice. We aim to brew small quantities of sake with a unique flavour.
The sake is named after the calligraphy "Shinzukiwa", which is said to have been written by Ryokan-sama on a pot lid in the olden days, meaning "the heart is as round and pure as the moon". The soft, fruity aroma of ginjo-shu is harmonised with the clean umami of junmai, making it an easy sake to pair with meals.
