The Muramatsu area of Gosen is located on the edge of the Niigata Plain and is surrounded by mountains on three sides. Using the local Hakusan subterranean water "Tengu no Shimizu" as brewing water and using rice grown by the brewer himself or in cooperation with local farmers, the brewery produces sake with a soft texture and good flavour, including the representative brand "Echigo Toji".
This ginjo-shu is made from 100% Gohyakumangoku rice cultivated under contract with a team of dedicated local growers, to express the brewery's attachment to Muramatsu, Gosen-shi, which was part of the Echigo 'Muramatsu clan' when the brewery was founded.
Like the cherry blossoms in Muramatsu Park, this sake has a neat taste in its early bloom, a pure and fragrant richness in full bloom, and a clean and elegant sharpness in its waning moments.
