The brewery uses subterranean water from the Nishiyama mountain range, highly polished quality Niigata rice, high technology and the harmony of young brewers,
The brewery produces clean sake that does not interfere with food and does not become boring to drink.
It is one of only a few breweries in Niigata Prefecture to have won the National Gold Medal five times in a row.
The Echino Hakugan brand is an almost exclusively local brewery with a local consumption rate of approximately 80%.
For this reason, it is one of the sake brands that you should definitely come to Niigata to try.

Echino Shiragane Junmai Ginjo is a junmai ginjo sake made from rice polished to just 50% and brewed slowly at low temperature. It is a deliciously balanced sake with a gentle, elegant aroma, a mellow richness and a soft, full taste.
