Since 2011, Yukitsubaki Sake Brewery has been a junmai brewery, producing only junmai sake, in order to highlight its own individuality and qualities.
Junmai sake, which does not contain added alcohol, is said to have a strong flavour of rice and is said to easily express the individuality of the brewery, and is made from the brewer's passion for making sake with flavour and clarity.
Koshitanrei is the ultimate sake rice, created by Niigata Prefecture after 15 years of research and development with the aim of creating a rice suitable for cultivation in Niigata that surpasses Yamada Nishiki. It combines the excellent brewing characteristics of both the paternal rice 'Gohyakumangoku' and the maternal rice 'Yamada Nishiki', both of which are representative of Niigata Prefecture, and reflects the brewing characteristics of high whiteness and low protein content, resulting in a light, yet full-bodied sake quality.
Koshino Yukitsubaki Junmai Ginjo Koshitanrei is made from 100% Koshitanrei produced in Sanjo, Niigata Prefecture, and has an elegant and refreshing aroma, and the full flavour of the rice is brought out in harmony with its refreshing lightness and soft, rich taste.
