Founded in 1875 (Meiji 8), the company is located in Rokkaichi-cho, at the southern end of Nagaoka City, which was formerly the centre of Koshi County and merged with Nagaoka City in 1954. Located at the foot of the Echigo Mountains, the brewery makes use of abundant groundwater. It is a small brewery with a total of five people, and the president doubles as toji (chief brewer).
Maizuru Echigo Ginjo-shu is a ginjo-shu with the flavour and sweetness of rice, even though the rice is polished to 50%. It can be served cold as well as warmed.
The brewery's recommended temperature is from chilled to snow-cold.
