Founded in 1767. The brewery is within walking distance of Niigata Station. The brewery offers sake tours, tastings at the shop and sales of original products, attracting many fans from within and outside the prefecture.
Junmai Ginjo Imadaiji is characterised by its gentle ginjo aroma and clean yet full flavour. In summer, it goes down the throat smoothly when cooled to 5-10°C (41-45°F), but you can also taste the umami and richness of the rice behind it, and enjoy the changes when warmed to lukewarm.
This is a type of sake that is best enjoyed on its own, so start by enjoying its aroma in a wide-mouthed sake cup.
The brewery recommends a temperature of 5-10°C or 40-50°C.
