Kinshihai Brewery was established in 1824. The Muramatsu area of Gosen is located on the edge of the Niigata Plain and is surrounded by mountains on three sides, making it a scenic area. The brewery uses local Hakusan subterranean water "Tengu no Shimizu" as its brewing water, and uses rice grown in cooperation with local farmers or by the brewery's own staff.
Echigo Toji Jungin has a light fragrance with a delicate veil of gentle umami and a mild aftertaste. The label was designed by ink elephant artist Nanami Nanazawa based on her impression of the actual drink.
The name 'Jun-Gin' stands for Junmai Ginjo, and the name is in hiragana to convey a sense of 'purity and something that has been examined and polished'.
