Founded in 1842 (Tempo 13). Myoko City, Niigata Prefecture, has prospered since the Edo period as a post town on the Hokkoku Kaido (Northern Highway) leading from the Sea of Japan to Nagano. It is also famous for its heavy snowfall, and the subsoil water from the foot of Mt Myoko, known as Echigo Fuji, is renowned, and together with the high quality Niigata rice, is said to be the best place for sake brewing.
The name 'Kiminoi' is synonymous with 'Niigata's Yamahai'. Kiminoi is one of the breweries that cannot be missed when talking about Niigata's sake.
The natural lactic acid bacteria living in the brewery are nurtured to produce an excellent sake mother. This is called 'Kurazuke Lactobacillus Brewing' and is the successor to the delicious and elegant 'Elegant Yamahai'.
In addition to Yamahai, modern brewing is also carried out in pursuit of a variety of tastes suited to the times.
