Itzumi Sake Brewery is the smallest sake brewery on Sado Island, famous for its gold mines. It is the only brewery on Sado Island that brews sake using the Yamahai method, which is rare in the prefecture.
The production volume is small, but the sake produced by the brewer and his staff, who are committed to the principle of 'beautiful sake with a true face', has a taste that only the Itzumi Shuzo can produce with the utmost attention to the five senses.
The Maryo Yamahai Junmai Daiginjo is a junmai daiginjo made from Niigata's Koshitanrei sake rice and medium-hard groundwater, similar to miyamizu (palace water), which comes from a land of seashells, giving it a sour and wild taste.
The brewery recommends serving cold to lukewarm.
