In 2011, the Yukitsubaki brewery became a junmai brewery, producing only junmai sake, in order to highlight its own individuality and qualities.
Junmai sake, which does not contain added alcohol, is said to have a strong flavour of rice and is said to easily express the individuality of the brewery, and is made from the brewer's passion for making sake with flavour and clarity.
This is a Niigata sake produced by the Yukitsubaki Shuzo brewery, which dares to stick to handmade junmai sake without mechanisation in pursuit of high quality.
Junmai Ginjo-shu is brewed using carefully selected and polished rice and limpid water. The low-temperature fermentation gives it a fine flavour and a gorgeous hint of fragrance.
The brewery recommends serving cold at 7°C or lukewarm at 45°C.
